Last October, scientists convened by the United Nations issued a dire warning: Unless carbon emissions fall by about 45 percent by 2030, we will face a world of climate chaos—more frequent droughts and floods, decimated coral reefs, and cities swamped by rising seas. Soon after, the Trump administration quietly released a similarly terrifying report from US government scientists, who estimated climate chaos will cost the country more than $500 billion annually by the century’s end. The president’s response? “I don’t believe it.”

Frankly, all this news made me want to stress-eat a giant steak and succumb to a food coma. But a spate of new studies have argued that cutting back on meat—way back—can help our climate enormously. Americans now eat a staggering 216 pounds of meat annually per person, nearly triple the global average. Even our appetite for beef, which fell during the Great Recession, has crept back up, and we eat more of it per capita than almost any other country.

Weight Watchers saw all this happening and concluded that people didn’t have faith in diets. The company decided that what it offered was not a diet program but a lifestyle program. It was a behavior-modification program. (For the sake of expediency here, I will call its program a diet because it prescribes amounts of food.) When Deb Benovitz returned from her travels with news of dieting’s new language changes, the company realized that something had to change more than its marketing approach.

Weight Watchers’ chief science officer is Gary Foster, a psychologist — the first in that position, which previously had been held by dietitians. What he and his team realized from Benovitz’s research was that dieters wanted a holistic approach to eating, one that helped really change their bodies, yes, but in a way that was sustainable and positive. He got to work creating a new approach that would become known as Beyond the Scale: He used all available mind-body research to try to figure out a way for members to appreciate benefits of the program besides weight loss. This would help them stay on the program during setbacks and beyond their weight-loss period and allow the program to infiltrate their lives beyond mealtime and beyond plain old eating suggestions.

The company would move away from giving its members goal weights. It expanded its cognitive-behavioral strategies, which taught members to challenge unhelpful thinking and to respond to their emotions with reason, as opposed to with food or despair. It developed workshops that used meditation and qigong and didn’t once mention food or weight. It updated its apps and introduced a social-media program, Connect. It became as holistic-minded as the people told Benovitz they wanted a program to be.

But Weight Watchers was still a company called Weight Watchers, and it had to figure out a way to communicate all of this change to the public. People had too many associations with the brand. It needed someone other than the usual celebrity spokesdieter, a fat famous person who could be paid somewhere between $250,000 and $2 million to do the talk show circuit and People covers for a year. It needed someone who could fast-track the message that it was worth taking a new look at Weight Watchers.

The binding of Lauren Greenfield’s new book of photography, “Generation Wealth,” has the color and sheen of a bar of yellow gold. The book has the heft of bullion, too: at seven pounds, it is too heavy to hold in a single hand, and too weighty to read unless rested on a lap or table. The size is demanded by the scope of the work. It consists of five hundred glossy pages of Greenfield’s photographs from the last quarter century, along with accompanying text. The images range from portraits of high-school students and gangbangers in Los Angeles, in the early nineteen-nineties, to photos of plastic-surgery aficionados undergoing their painful rites in the mid-two-thousands to pictures of high rollers at Las Vegas casinos “making it rain,” tossing stacks of dollar bills like confetti to the glee of those around them. But the book’s design also seems intended to be ironic commentary on the culture, or subcultures, it seeks to portray: materialistic, vulgar, excessive, and wasteful. The book would fit perfectly into the pseudo-rococo decorating scheme of the penthouse apartment at Trump Tower.

Perhaps you’ve heard about this climate change? A buildup of greenhouse gases — largely produced by us — in our atmosphere over the past century is warming the atmosphere. This warming will result in all kinds of fun consequences such as increased precipitation, regular heat waves and drought, stronger hurricanes and sea level rise on the order of at least a foot.

It is, by no exaggeration, a problem of global proportions. Just months ago 136 nations ratified the Paris Climate Agreement — the international diplomatic equivalent of your group project members finally agreeing to meet the night before your group presentation is due. It’s also a problem that is slightly out of the control of the average person. Between 1970 and 2011, 78 percent of all greenhouse gasses emitted were the work of industrial processes and transportation.

The more cynical among us might see that stat and throw their hands up. No one person can halt the complex systems that keep the engines of our planet going. But maybe you aren’t a cynical person. Perhaps you watched Leonardo DiCaprio’s Before The Flood, and now feel like you should try and do something. Maybe you’d like to, at least, no longer contribute to the problem.

Fantastic. The good news is that just about everything you do emits some kind of greenhouse gas into the atmosphere — if you really want to understand the exact extent of which, go ahead and use a carbon calculator — so there’s plenty you can do to reduce that.

I have found a new way to watch TV, and it changes everything

HAVE a habit that horrifies most people. I watch television and films in fast forward. This has become increasingly easy to do with computers (I’ll show you how) and the time savings are enormous. Four episodes of “Unbreakable Kimmy Schmidt” fit into an hour. An entire season of “Game of Thrones” goes down on the bus ride from D.C. to New York.

I started doing this years ago to make my life more efficient. Between trendy Web shows, auteur cable series, and BBC imports, there’s more to watch than ever before. Some TV execs worry that the industry is outpacing its audience. A record-setting 412 scripted series ran in 2015, nearly double the number in 2009.

“There is simply too much television,” FX Networks CEO John Landgraf said last year. Nonsense, responded Netflix content chief Ted Sarandos, who has been commissioning shows at a startling rate. “There’s no such thing as too much TV,” he said.

So here we are, spending three hours a day on average, scrambling to keep up with the Kardashians, the Starks, the Underwoods, and the dozens of others on the roster of must-watch TV, which has exploded in the age of fragmented audiences. Nowadays, to stay on the same wavelength with your different groups of friends — the ones hating on “Meat Chad” and the ones cooing over Khaleesi — you have to watch in bulk.

Breaking Down The Science Of Picky Eating

Our food preferences are intensely personal, but scientists have tried to figure out why some people are so picky about the things they eat. Jane Kauer is anthropologist who has studied this topic at the University of Pennsylvania and at the Monell Chemical Sciences Center. She’s also a board member of the youth nutrition company Rebel Ventures. She sits down with Here & Now co-host Jeremy Hobson to talk about the science and culture of picky eating. Why (almost) everything you know about food is wrong

There was a time, in the distant past, when studying nutrition was a relatively simple science.

In 1747, a Scottish doctor named James Lind wanted to figure out why so many sailors got scurvy, a disease that leaves sufferers exhausted and anemic, with bloody gums and missing teeth. So Lind took 12 scurvy patients and ran the first modern clinical trial.

The sailors were divided into six groups, each given a different treatment. The men who ate oranges and lemons eventually recovered — a striking result that pointed to vitamin C deficiency as the culprit.

This sort of nutritional puzzle solving was common in the pre-industrial era. Many of troubling diseases of the day, such as scurvy, pellagra, anemia, and goiter, were due to some sort of deficiency in the diet. Doctors could develop hypotheses and run experiments until they figured out what was missing in people’s foods. Puzzle solved.

Unfortunately, studying nutrition is no longer that simple. By the 20th century, medicine had mostly fixed scurvy and goiter and other diseases of deficiency. In developed countries, these scourges are no longer an issue for most people.

Today, our greatest health problems relate to overeating. People are consuming too many calories and too much low-quality food, bringing on chronic diseases like cancer, obesity, diabetes, and heart disease.

Junk food is tricking your brain: The depressing science behind your binging

Eating for the sake of pleasure, rather than survival, is nothing new. But only in the past several years have researchers come to understand deeply how certain foods—particularly fats and sweets—actually change brain chemistry in a way that drives some people to overconsume.

Scientists have a relatively new name for such cravings: hedonic hunger, a powerful desire for food in the absence of any need for it; the yearning we experience when our stomach is full but our brain is still ravenous. And a growing number of experts now argue that hedonic hunger is one of the primary contributors to surging obesity rates in developed countries worldwide, particularly in the U.S., where scrumptious desserts and mouthwatering junk foods are cheap and plentiful.

No, Lettuce Is Not Worse For The Environment Than Bacon

If you follow the intersection of food and climate change, you know that you can barely swing a reusable grocery bag these days without running into a new study or article bemoaning the environmental damages of a meat-heavy diet.

So imagine the joy that must have leapt into meat-eaters’ hearts when Tuesday, media outlets from around the world ran a story claiming that the environmental villain lurking in your refrigerator is not that salty slab of bacon, but that crisp head of lettuce hiding innocently in the salad drawer.

“Bacon lovers of the world, rejoice!” cried one article in Climatewire.

That celebration, however, should be short-lived. Sorry to break it to you, meat enthusiasts, but bacon isn’t necessarily better for the environment than lettuce.

The issue is that the original Carnegie Mellon study on which the claim was based looked at energy, water use, and greenhouse gas emissions on a per calorie basis.
